Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 tablespoon dried oregano
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup quinoa, rinsed
  • 2 cups chicken broth or water
  • 4 cups fresh spinach
  • 1/4 cup feta cheese, crumbled (optional)
  • Lemon wedges (for serving)

Instructions

  1. 1.In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, oregano, parsley, salt, and black pepper to create a marinade.
  2. 2.Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Let it marinate for 10 minutes while you prepare the quinoa.
  3. 3.In a medium saucepan, bring 2 cups of chicken broth or water to a boil. Add the quinoa, reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Fluff with a fork.
  4. 4.While the quinoa cooks, heat a large skillet over medium heat. Remove the chicken from the marinade and add it to the skillet. Cook for about 5-6 minutes on each side until the chicken is cooked through and has a nice golden color.
  5. 5.In the same skillet, add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.
  6. 6.To serve, divide the quinoa among four plates, top each with a chicken breast, and add a generous portion of sautéed spinach. Sprinkle with feta cheese if desired and serve with lemon wedges.
