Lemon Garlic Herb Chicken with Quinoa and Spinach

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups quinoa
  • 4 cups chicken broth (or vegetable broth)
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. 1.1. Rinse quinoa under cold water until the water runs clear. In a medium pot, combine quinoa and chicken broth. Bring to a boil, then reduce to low heat, cover, and simmer for 15 minutes until quinoa is fluffy and liquid is absorbed.
  2. 2.2. While the quinoa cooks, prepare the chicken. In a bowl, mix lemon juice, lemon zest, minced garlic, olive oil, salt, and pepper. Marinade chicken in this mixture for at least 5 minutes.
  3. 3.3. Heat a large skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and they are golden brown. Remove from skillet and let rest for a couple of minutes.
  4. 4.4. In the same skillet, add fresh spinach and sauté until wilted, about 2 minutes. Season with salt and pepper to taste.
  5. 5.5. To serve, fluff the quinoa with a fork and divide it among four plates. Top with sautéed spinach and sliced chicken breasts. Garnish with fresh parsley and basil.
