Ingredients

  • 1 cup cooked quinoa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup breadcrumbs (or almond flour for gluten-free)
  • 1/2 cup grated cheese (cheddar or mozzarella)
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • Oil for frying (olive oil or coconut oil)

Instructions

  1. 1.In a large bowl, combine the cooked quinoa and black beans, mashing the beans slightly with a fork.
  2. 2.Add breadcrumbs, grated cheese, green onions, minced garlic, cumin, chili powder, salt, and black pepper to the quinoa and beans. Mix well.
  3. 3.Stir in the egg until everything is fully incorporated.
  4. 4.Shape the mixture into small balls or patties, about 2 inches in diameter.
  5. 5.Heat a skillet over medium heat and add enough oil to coat the bottom.
  6. 6.Fry the quinoa and black bean bites in batches, about 3-4 minutes on each side, until they are golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.
  7. 7.Serve warm with your favorite dipping sauce, such as salsa, guacamole, or yogurt-based dressing.
