Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 1 cup quinoa, rinsed and drained
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1 tablespoon balsamic vinegar

Instructions

  1. 1.In a bowl, mix olive oil, lemon juice, oregano, thyme, salt, and pepper to create a marinade.
  2. 2.Add chicken breasts to the marinade and let them sit for about 10 minutes.
  3. 3.While the chicken is marinating, cook the quinoa: In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
  4. 4.Once quinoa is cooked, allow it to cool slightly, then mix in cherry tomatoes, cucumber, red onion, parsley, feta cheese (if using), and balsamic vinegar. Season with salt and pepper to taste.
  5. 5.Preheat the grill to medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side or until cooked through and internal temperature reaches 165°F (75°C).
