Ingredients
- 4 oz ground turkey (lean, 93% lean)
- 1 medium sweet potato (150g), diced
- 1 cup spinach, fresh (cooked)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 teaspoon paprika
Instructions
Preheat the oven to 400°F (200°C).
Toss the diced sweet potato in a bowl with half of the olive oil, garlic powder, salt, pepper, and paprika.
Spread the sweet potato on a baking sheet and roast for about 25 minutes, or until tender.
In the meantime, heat the remaining olive oil in a skillet over medium heat.
Add the ground turkey to the skillet, season with salt and pepper, and cook until browned and cooked through (about 7-10 minutes).

Once the sweet potatoes are done, assemble the bowl by placing the turkey and spinach mixture over the roasted sweet potatoes.
